Blueberry Streusel Cake Recipe
- 3/4 c. sugar divided
- 1/4 c. margarine softened
- 1 lrg egg
- 1 tsp lemon rind grated
- 1 1/2 c. all-purpose flour
- 1/2 tsp baking soda
- 1/2 c. plain lowfat yogurt vegetable cooking spray
- 1 Tbsp. all-purpose flour
- 2 c. fresh blueberries
- 1 tsp grnd cinnamon
- 1/8 tsp grnd allspice
- 1 tsp powdered sugar
- Combine 1/2 c. sugar; and next 3 ingredients; beat at medium speed with an electric mixer 5 min.
- Combine 1 - 1/2 c. flour and baking soda; add in to egg mix alternately with yogurt, beginning and ending with flour mix.
- Pour batter into a 9 inch round tart pan coated with cooking spray., spreading proportionately over bottom and up sides of pan.
- Combine remaining 1/4 c. sugar, 1 Tablespoons flour, and next 3 ingredients, tossing gently.
- Spoon over batter, leaving a 1/2 inch border.
- Bake at 350 for 45 min or possibly till lightly browned; cold 20 min on a wire rack.
- Sprinkle with powdered sugar.
