Frosting And Icing

  1. In a 2-quart saucepan, combine gelatin with the water.
  2. Let stand 5 minutes.
  3. Stir in granulated sugar.
  4. Place over medium heat,and bring to a boil.
  5. Reduce heat, and simmer for 10 minutes.
  6. Stir in confectioners' sugar, and beat with a whisk until foamy.
  7. Whisk in baking powder and vanilla.
  8. Transfer to the large bowl of an electric mixer, and beat at high speed until thick and cool, about 10 minutes.
  9. The frosting is bright white, but it can be tinted in small batches with food coloring.
  10. Use the icing as soon as it is made.
  11. For frosting cookies, spread with a metal spatula; for decorating, use in a pastry bag.
  12. Spread out the cookies in one layer to dry completely, about 40 minutes.
