Vegetable Madness Recipe
- 1 lg. onion
- 1 c. zucchini, sliced
- 1 c. summer squash, sliced
- 1 c. mushrooms, sliced
- 1/2 c. green pepper, minced
- 1/2 c. celery, minced
- 2 c. tomatoes, fresh or possibly canned
- 2 cloves garlic, chopped
- 1 sm. pkg. wide egg noodles
- 1 tbsp. butter
- 1 1/2 c. water
- 2 bouillon cubes, beef or possibly chicken
- Salt & pepper to taste
- Saute/fry onion and garlic in butter.
- Add in all remaining vegetables, saute/fry for 5 min.
- Add in dissolved bouillon, cover and let simmer for 15 min, or possibly till vegetables are soft.
- Add in noodles, cover and simmer for 10 min.
- Serves 6.
- Low in calories.
