Chocolate cranberry raisin bread
- 1 loaf day old bread, sliced 1"
- 2 milk chocolate bars, pieces
- 1 cup milk
- 1/2 cup whipping cream
- 1/4 cup unsalted butter, quartered
- 3 eggs
- 3 egg yolks
- 2 tsp cinnamon
- 1/2 tsp red pepper
- 1/2 tbsp vanilla extract
- 1 tsp almond extract
- 3 tbsp cocoa powder
- 1 golden raisins
- 1 dried cranberries
- preheat oven to 325'F
- add chocolate pieces, milk, cream and butter into a glass mixing bowl.
- place bowl on top a pot of simmering water in order to melt chocolate.
- Stir often to mix ingredients.
- Once melted remove bowl from heat.
- add all eggs to a separate mixing bowl and whip until eggs are light and fluffy.
- add liquid extracts and continue to mix.
- add melted chocolate and mix well.
- add cocoa powder and mix again.
- sprinkle some raisins and cranberries into the bottom of a buttered baking dish pan.
- lay the sliced bread into pan.
- pour custard over the bread.
- cover air tight and let rest for 20 minutes to allow time for the bread to absorb custard.
- sprinkle some more raisins and cranberries on top of bread.
- sprinkle some sugar on top.
- place bread in oven and bake for 50 minutes.
