Asian Noodle Salad Recipe
- 4 ounce Chuka soba noodles
- 1 Tbsp. Oriental sesame oil
- 2 Tbsp. Sesame seeds
- 2 c. Fresh bean sprouts
- 1/4 lb Small cooked shrimp, peeled
- 3 x Green onions, thinly sliced
- 1 stalk celery, thinly sliced on the diagonal
- 1/4 lb Mushrooms, thinly sliced
- 1/3 c. Rice wine vinegar
- 2 Tbsp. Sugar
- 2 Tbsp. Soy sauce
- 1/4 tsp Grnd ginger
- 1/4 tsp Dry mustard
- 1 pch Cayenne pepper
- 1/4 c. Salad oil
- To prepare salad, add in noodles to a large kettle of boiling salted water.
- When water returns to a boil and noodles come to top, cook till just tender (2 to 3 min).
- (If another type of pasta is used, follow package directions.)
- Drain, rinse with cool water, and drain again.
- In a large bowl mix noodles with sesame oil; set aside.
- Stir sesame seeds in a small frying pan over medium heat till lightly browned (6 to 8 min); cold.
- Add in bean sprouts to a large kettle of boiling water; when it returns to a boil, remove from heat, drain, rinse with cool water, and drain again; add in to noodles.
- Cover and chill for at least 1 hour.
- To prepare Soy Dressing, mix vinegar, sugar, soy sauce, ginger, mustard, and cayenne in a small bowl.
- Using a whisk gradually fold in oil till blended.
- NOTES : To serve, lightly combine noodle mix, sesame seeds, shrimp, onion, celery, mushrooms, and Soy Dressing.
