Open-Faced Avocado Sandwiches
- 1 large avocado, peeled, pitted and cut into thin slices
- 13 cup Italian dressing
- 4 tablespoons mayonnaise
- 4 slices bread, toasted (oatmeal or whole wheat is best)
- 4 slices provolone cheese (whatever your preference. Mom's original recipe called for American) or 4 slices gouda cheese (whatever your preference. Mom's original recipe called for American) or 4 slices gruyere (whatever your preference. Mom's original recipe called for American) or 4 slices swiss cheese (whatever your preference. Mom's original recipe called for American)
- 1 large ripe tomatoes, sliced into 8 slices
- 1 cup alfalfa sprout
- Toss avocado slices gently with Italian dressing; drain well, reserving the dressing.
- Spread mayo evenly over 1 side of each bread slice.
- Top bread slices evenly with avocado, cheese slices, tomato and alfalfa sprouts.
- Drizzle sandwiches evenly with reserved Italian dressing and serve immediately.
