Classic Cajun Jambalaya

  1. Combine the shrimp, chicken and spices in a bowl and mix well.
  2. Add salt and pepper.
  3. In a large saucepan, heat 2 tablespoons of olive oil over high heat and add the onion and peppers.
  4. Cook for 3 minutes, until translucent.
  5. Add minced garlic, bay leaves and Sriracha.
  6. Stir in rice, then add the broth slowly.
  7. Reduce heat to medium-low, cover tightly and cook until rice absorbs liquid and becomes tender, for about 15 minutes.
  8. Remove and discard bay leaves.
  9. When the rice is almost cooked, reduce the heat to low and add the shrimp, chicken, and andouille and cook until meat is done, about 10 minutes more.
  10. Stir in the lemon zest, season to taste with salt and pepper and serve.
