Pasta with 4 Cheeses and Spinach

  1. Cook the pasta according to the instructions on the pack and drain reserving 1/4 cup of the cooking water.
  2. Return the cooking water to the pan and add the marscepone, parmesan and dolcelatte, blending with a whisk until smooth.
  3. Add the pasta and mix to coat with the sauce.
  4. Add the tomatoes and mozarrella and stir quickly.
  5. Serve topped with the fresh spinach leaves.
