Black Forest Potato Salad

  1. In a 2-quart saucepan over medium heat, cook potatoes, covered, in 2 inches boiling water until tender, approximately 12 minutes; drain.
  2. Meanwhile, in large bowl whisk together vinegar, oil, water and pepper.
  3. Mix in apples.
  4. In large non-stick skillet over medium heat, toss and brown sausage 10 minutes.
  5. Remove with slotted spoon.
  6. Drain on paper towels.
  7. Add potatoes, sauerkraut, onions, parsley and sausage to apple mixture; toss gently.
  8. Season with salt.
