Gingered Beets

  1. In a saucepan, blend sugar, ginger and cornstarch and gradually add the vinegar.
  2. Stir until smooth.
  3. Cook over medium heat, stirring, until thick.
  4. Add the beets and butter and simmer for 10 minutes.
  5. Serve hot sprinkled with parsley.
