Gingered Beets
- 13 cup sugar
- 34 teaspoon ground ginger
- 2 teaspoons cornstarch
- 14 cup apple cider vinegar
- 2 12 cups canned beets, drained
- 2 tablespoons butter
- 1 tablespoon chopped parsley
- In a saucepan, blend sugar, ginger and cornstarch and gradually add the vinegar.
- Stir until smooth.
- Cook over medium heat, stirring, until thick.
- Add the beets and butter and simmer for 10 minutes.
- Serve hot sprinkled with parsley.
