Baked Butternut Squash

  1. Peel and cut open the squash.
  2. remove and discard the seeds and the fibers.
  3. Cut the squash into 1-inch cubes.
  4. Turn the squash into a buttered 2-quart baking dish.
  5. Sprinkle with the salt and pepper, anise seed, cardamom and brown sugar.
  6. Drizzle butter and lemon juice over the top.
  7. Bake the squash, uncovered in a preheated 350F (180C) oven for about 30 minutes, or until tender.
