Chef Compton's Scalloped Oysters (Multnomah Athletic Club)

  1. Preheat oven to 300 degrees.
  2. Grind or chop oysters with a sharp knife (not too finely).
  3. Beat eggs and add oysters and milk to the beaten eggs.
  4. Mix well.
  5. Crumble crackers by hand (not too finely).
  6. Fold into oyster mixture, adding salt and pepper.
  7. Let mixture stand until firm.
  8. Pour into a casserole dish.
  9. Place dish in a pan of water and bake in preheated oven until firm (like a custard).
  10. Serve at once.
