Holiday Flavors In A Pot Pie For 2 or 4 People

  1. Gather your chopped carrots, celery and pearl onions.
  2. In a stock pot, add olive oil and heat over medium heat.
  3. Add in carrots, celery and onions and saute for 4 minutes.
  4. Remove after 4 minutes and set aside.
  5. Add in ground turkey, season with a small amount of the salt and pepper and cook until no longer pink.
  6. Several minutes.
  7. Add to pot the sweet potatoes and wine.
  8. Cook for five minutes.
  9. Return celery, carrots and onions.
  10. Pour in chicken stock and add rest of seasonings.
  11. Cook until potatoes are just tender.
  12. Remove the 2 1/2 tablespoons of broth and mix well with cornstarch.
  13. Add in half and half and cook for 2 more minutes.
  14. Shut off heat and cover pot to keep warm.
  15. Preheat oven to 425F.
  16. Roll out each sheet of pastry to cover 2, 10 oz.
  17. ramekins or 4, 6 oz ramekins.
  18. Leave about a 1/4 " extra overlay to crimp on ramekin.
  19. Fill your ramekins.
  20. Brush rim with a touch of cream and lay pastry on top.
  21. Crimp edges decoratively now.
  22. Brush each with cream, place on baking tray and cook for 15-20 until golden.
