Roasted Chicken with Bourbon-Barbecue Sauce

  1. Heat oven to 375 degrees F.
  2. Bake chicken in shallow pan 45 min.
  3. or until done (165 degrees F).
  4. Meanwhile, heat oil in medium saucepan on medium heat.
  5. Add peppers, shallots and garlic; cook and stir until tender.
  6. Add remaining ingredients; mix well.
  7. Cook until sugar is dissolved and sauce is thickened, stirring occasionally.
  8. Serve chicken with sauce.
