Roasted Tomato and Turkey Pesto Wraps

  1. Preheat oven to 400 F.
  2. Add tomatoes into a small bowl.
  3. Toss with a drizzle of olive oil and a pinch of salt and pepper.
  4. Place tomatoes on a small baking sheet and roast for 10-15 minutes until tender.
  5. When done, remove them from the oven and set aside.
  6. Put your wraps on a work surface.
  7. Spread 1 tablespoon of pesto on each wrap.
  8. Top with 3 slices of fresh mozzarella, 1/2 of the turkey and top with 1/2 the roasted tomatoes.
  9. Roll up the wrap bringing sides in to close the ends.
  10. Then slice it in half.
  11. Continue with remaining wrap.
  12. Serve with a side salad or fresh fruit.
