Roasted Tomato and Turkey Pesto Wraps
- 1/2 pounds Cherry Tomatoes
- 1/2 Tablespoons Olive Oil
- 1 pinch Salt And Pepper
- 2 whole 10" Spinach, Garlic And Pesto Tortilla Wraps (or Similar)
- 2 Tablespoons Store Bought Or Prepared Basil Pesto
- 4 ounces, weight Fresh Mozzarella, Cut Into 6 Slices
- 1/4 pounds Good Quality Sliced Deli Turkey Breast
- Preheat oven to 400 F.
- Add tomatoes into a small bowl.
- Toss with a drizzle of olive oil and a pinch of salt and pepper.
- Place tomatoes on a small baking sheet and roast for 10-15 minutes until tender.
- When done, remove them from the oven and set aside.
- Put your wraps on a work surface.
- Spread 1 tablespoon of pesto on each wrap.
- Top with 3 slices of fresh mozzarella, 1/2 of the turkey and top with 1/2 the roasted tomatoes.
- Roll up the wrap bringing sides in to close the ends.
- Then slice it in half.
- Continue with remaining wrap.
- Serve with a side salad or fresh fruit.
