Salt and Vinegar Potato Bites

  1. Soak potatoes in large bowl of cold water 30 minutes.
  2. Drain, and pat dry.
  3. Preheat oven to 425F.
  4. Toss potatoes with oil on baking sheet, and spread in single layer.
  5. Roast 45 minutes, or until golden and crisp, turning 2 or 3 times.
  6. Season with salt and pepper, if desired.
  7. Meanwhile, bring vinegar and sugar to a simmer in saucepan over medium heat.
  8. Cook 15 to 20 minutes, or until liquid is reduced by half, stirring occasionally.
  9. Serve malt sauce on side for dipping, or drizzle over potatoes.
