Chocolate Coconut Fudge
- 1/2 cups Pitted Dates
- 1/2 cups Water
- 1/2 cups Pitted Dates
- 1 cup Unsweetened Cocoa
- 3 Tablespoons Melted Coconut Oil
- 1/4 cups Unsweetened Coconut Flakes
- 1 dash Sea Salt, to taste
- 1 Tablespoon Unsweetened Coconut Flakes (garnish)
- 1.
- Make the date syrup first.
- Combine the dates and water in a food processor and blend until a liquid is formed.
- 2.
- Add the remaining ingredients (excluding the last amount of coconut which is for garnish) to the date syrup in the food processor and blend until well combined.
- 3.
- Press into a small pan or baking dish.
- (I used a 5 casserole dish.
- I also lined it with parchment paper for easy clean-up.)
- 4.
- Place in the fridge to set for about an hour.
- Cut into squares and sprinkle with remaining coconut flakes.
