Zucchini and Tomato Risotto with Garlic Prawns

  1. Combine onion and oil in a large bowl and cook on HIGH (850W) for 2-3 minutes.
  2. Add tomato puree, stock and rice, cover and cook on HIGH (850W) for 12 minutes.
  3. Add zucchini, stir well and cook for a further 6-8 minutes on HIGH (850W).
  4. Allow to stand covered for 2 minutes.
  5. Stir through parsley and Parmesan.
  6. Heat extra oil and garlic in a large bowl on HIGH (850W) for 2 minutes.
  7. Add prawns and cook on MEDIUM (500W) for 1-2 minutes, stirring twice during cooking time.
  8. Serve risotto topped with garlic prawns.
