Besitos De Coco (Coconut Kisses) Recipe
- Meat of one fresh medium coconut grated
- 1 c. Water
- 1 1/2 c. Dark brown sugar
- Combine the water and sugar in a heavy-bottomed saucepan.
- Bring to a boil.
- Reduce the heat to low and cook, stirring occasionally, till it becomes like a hard ball or possibly reaches 275 degrees.
- Add in the coconut and continue cooking till no steam rises from the pot and all the liquid has evaporated.
- Using a Tbsp., drop the coconut kisses onto a greased cookie sheet and let cold.
