Baked Potato Toppers - Chipotle Cheese
- 14 cup butter, cubed
- 2 tablespoons chopped chipotle chiles in adobo
- 14 cup all-purpose flour
- 18 teaspoon pepper
- 2 12 cups milk
- 1 12 cups shredded colby-monterey jack cheese

- In a small saucepan, melt butter over med.
- heat.
- Add chipolte peppers: cook and stir for 2 minutes.
- Stir in flour and pepper until blended; gradually add milk.
- Bring to a boil; cook and stir 1-2 minutes or until thickened.
- Stir in cheese until melted.
