Mac & Cheese Bites

  2. Cook pasta and drain well.
  3. Set aside.

  5. Preheat oven to 425 degrees F. 3.
  6. Spray a nonstick mini muffin pan, and set aside.

  8. In a large pan, melt butter on medium heat.
  9. Whisk in the flour and cook for 1 minute.

  11. Add in the milk and bring to a boil, whisking frequently until very thick.
  12. 6.
  13. Add cheddar and parmesan cheese and stir to melt.
  14. 7.
  15. Remove from heat and stir in the egg yolks, salt, nutmeg, and other optional spices.
  16. Stir in macaroni.
  17. 8.
  18. Spoon in the macaroni into prepared mini muffin pan.
  19. Sprinkle extra parmesan cheese on top if desired.
  20. 9.
  21. Bake for about 7-10 minutes.
  22. Cool for 5 minutes.
  23. 10.
  24. Using a spoon, loosen the mac and cheese bite and transfer to a platter to serve.
  25. Yield about 60 bites!
  26. Note: Make sure these are fresh and hot.
  27. If you make them the night before serving, or reheat, some of the flavor gets lost.
  28. If you like it VERY cheesy, reduce to 12-13 ounces of macaroni.
