Coconut Almond Granola

  1. Preheat oven to 325 degrees F. Line a large sheet pan with parchment paper or a baking mat.
  2. In a large bowl, combine oats, wheat germ, milled flax, almonds and coconut.
  3. In a smaller bowl, mix remaining ingredients and pour over dry ingredients.
  4. Stir until evenly coated.
  5. Spread granola on sheet pan and bake for about 40-45 minutes until golden brown.
  6. Stir every 10-15 minutes.
  7. Watch carefully the last 5 minutes to prevent over-browning.
  8. Cool completely.
  9. Break into chunks and store in an airtight container.
  10. Lasts for several weeks in the pantry.
