Mock Scrambled Egg (Tofu) Wrap - Vegan
- 1 teaspoon vegan butter
- 12-1 red onion
- 1 firm tofu
- 18 teaspoon garlic powder
- 18 teaspoon turmeric
- 4 flour tortillas
- 1 tablespoon vegan mayonnaise
- 1 tomatoes
- Melt the butter in a medium sauce pan.
- Add the red onion and saute until translucent (about 3 minutes).
- Drain the tofu and pat off some of the remaining moisture with a few paper towels.
- Add the tofu, the garlic powder, and turmeric to the sauce pan.
- Use a spoon to break up the tofu into small chunks that resemble scrambled eggs.
- Heat the mixture until warmed all the way through.
- In a separate frying pan heat up the flour tortillas.
- Spread the tortilla with some veginase and the tofu scramble.
- Top with a couple of slices of tomatoes per wrap.
