Cheaters' dilly beans
- 1 jar of pickle juice (leftover after you've eaten the pickles)
- 1 bunch fresh green beens... A bit larger than what you think will fit in the pickle jar.
- Clean beans by washing and snapping off stem ends.
- Blanche the beans: bring a pot of water to a boil.
- When boiling, add beans.
- Cook 1 minute.
- Don't cook any longer... they won't be crunchy anymore.
- Immediately drain beans and plunge into an ice bath (a bowl of ice water) for 5 minutes.
- When cooled, place the beans in the jar with the left over pickle juice.
- Chill in fridge for 3 days.
