Cheaters' dilly beans

  1. Clean beans by washing and snapping off stem ends.
  2. Blanche the beans: bring a pot of water to a boil.
  3. When boiling, add beans.
  4. Cook 1 minute.
  5. Don't cook any longer... they won't be crunchy anymore.
  6. Immediately drain beans and plunge into an ice bath (a bowl of ice water) for 5 minutes.
  7. When cooled, place the beans in the jar with the left over pickle juice.
  8. Chill in fridge for 3 days.
