Herb & Shiitake Cheese Omelette
- 50 grams Pork belly (thinly sliced)
- 50 grams Shiitake mushrooms
- 1 slice Sliced cheese
- 1/2 tsp Mixed Italian herbs
- 1/2 tsp Coarsely grated garlic
- 1 Egg
- 1 tbsp Extra virgin olive oil
- Slice the caps of the shiitake mushrooms, and shred the stems thinly.
- Cut the pork into bite-sized pieces.
- Put some oil in the frying pan, and cook the shiitake mushrooms.
- Add the meat, herb mix, and chopped garlic and cook through.
- Once all of the ingredients are cooked, place the cheese on top.
- Meanwhile, beat the egg.
- The cheese has melted by now, right?
- Shake the frying pan to mix things up, add the egg, and shake to mix again.
- When the edges of the egg start to firm up, flip the omelette.
- It's okay if the middle is still a little soft.
- Fold the omelette, but don't worry about getting it perfect.
- There you go!
- It's ready to eat.
