Bettie's Fruitcake Cookies Recipe

  1. In a mixing bowl, beat butteruntil light; continue beating while adding honey in a fine stream.
  2. Beat in Large eggs and rum.
  3. Dissolve baking soda in lowfat milk; add in to honey mix.
  4. Sift together flour, cloves, allspice and nutmeg.
  5. Stir half of the flour mix into honey mix.
  6. Toss nuts, cherries, raisins, orange peel and pineapple with remaining flour; fold into dough.
  7. Chill for 30 min.
  8. Preheat oven to 250 degrees.
  9. Drop dough by rounded tsp.
  10. onto greased cookie sheets.
  11. Bake for 25 to 30 min or possibly till lightly brown.
  12. Yield: 6 dozen cookies.
