Bettie's Fruitcake Cookies Recipe
- 1/4 c. Butter ( 1/2 stick)
- 1/2 c. Honey
- 2 x Large eggs
- 1/4 c. Dark rum or possibly pineapple juice
- 1 1/2 tsp Baking soda
- 2 Tbsp. Lowfat milk
- 1 1/2 c. Sifted all-purpose flour
- 1/2 tsp Grnd cloves
- 1/2 tsp Grnd allspice
- 1/2 tsp Grnd nutmeg
- 3 c. Minced walnuts
- 1 c. Minced candied cherries
- 1 c. Golden brown raisins
- 3/4 c. Minced candied orange peel
- 1/2 c. Minced candied pineapple
- In a mixing bowl, beat butteruntil light; continue beating while adding honey in a fine stream.
- Beat in Large eggs and rum.
- Dissolve baking soda in lowfat milk; add in to honey mix.
- Sift together flour, cloves, allspice and nutmeg.
- Stir half of the flour mix into honey mix.
- Toss nuts, cherries, raisins, orange peel and pineapple with remaining flour; fold into dough.
- Chill for 30 min.
- Preheat oven to 250 degrees.
- Drop dough by rounded tsp.
- onto greased cookie sheets.
- Bake for 25 to 30 min or possibly till lightly brown.
- Yield: 6 dozen cookies.
