Flounder Fillets Baked Flounder Fandango With Variations

  2. Dice and boil potatoes and carrots for 5 - 8 minutes drain.

  4. Mince and saute onion in melted butter until tender.

  6. Place fillets in shallow, buttered heat-proof dish in one layer, sptinkle with thyme,
  7. salt and pepper.
  8. Spoon diced vegetables and oniond over top of fillets.

  10. Bake for 1/2 hour at 350*F.

  12. Garnish with parsley before serving.
  13. My Note: To DEEP FRY: Heat oil to 350*F. Coat fish with flour.

  15. Fry until golden brown.
  16. TO BAKE: Preheat oven to 375*F. Place fish in oiled baking dish.
  17. Season to taste.
  18. Bake for 8 to 12 minutes - until fish flakes when pierced with a fork.
  19. TO GRILL: Preheat grill.
  20. Season with salt and pepper.
  21. Turn afther 3 to 4 minutes.
  22. Continue to grill - until fish flakes when pierced with a fork.
  23. TO BROIL: Set oven to broil.
  24. Position fish in in pan and season to taste.
  25. With fish 4 to 5 inches from heat, broil about 5 minutes until fish flakes when pierced with a fork.
