Horseradish and Leek Smothered Salmon
- 1 lb salmon (Sockeye preferred)
- 1 cup sliced leek
- 2 tablespoons fresh grated horseradish
- 12 cup chicken broth
- 4 tablespoons butter
- Preheat oven to 350F.
- Place two teaspoons of butter and a forth of the horseradish on the bottom of a casserole dish.
- Place the salmon on too and cover with remaining Horseradish and leaks.
- Place covered in oven for 10 minutes.
- After 10 minutes remove the lid and add the chicken broth being careful to only pour the broth around the edges.
- Lift the edges of the salmon to allow coverage.
- Leave uncovered and turn oven up to 425F for 5 minutes or until desired doneness.
