Fettuccine with Snow Peas and Goat Cheese
- 3/4 lb. (340 g) fettuccine, uncooked
- 1 Tbsp. extra virgin olive oil
- 1 onion, finely chopped
- 1 cup coarsely chopped trimmed snow peas
- 1 jar (650 mL) Classico di Sorrento Roasted Garlic & Onion Pasta Sauce
- 85 g goat cheese, crumbled
- 2 Tbsp. chopped fresh parsley
- Cook pasta as directed on package, omitting salt.
- Meanwhile, heat oil in large skillet on medium heat.
- Add onions; cook 5 min.
- or until softened, stirring frequently and adding snow peas to the skillet for the last minute.
- Stir in pasta sauce; simmer 2 to 4 min.
- or until heated through, stirring occasionally.
- Drain pasta; place in large bowl.
- Add pasta sauce mixture; mix lightly.
- Top with cheese and parsley.
