Bran Muffins 1 Recipe
- 1 1/2 c. All-Bran
- 1/4 c. Oil
- 1/2 c. Raisins
- 1/2 c. Boiling Water
- 1 x Egg lightly beaten
- 1 c. Buttermilk
- 1/4 c. Molasses
- 1 c. Whole Wheat Flour (plus 2 tbsp.)
- 2 tsp Sugar
- 1 1/4 tsp Baking Soda
- 1/4 tsp Salt
- In a large bowl, combine the All-Bran, oil, and raisins, and pour the boiling water over them.
- Set the mix aside to cold slightly.
- In a small bowl, combine the Large eggs, buttermilk, and molasses.
- Add in this to the partially cooled cereal mix.
- In another small bowl, combine the flour, sugar, baking soda, and salt.
- Add in the flour mix to the cereal mix, stirring just sufficient to moisten.
- Cover with plastic wrap and let stand for 1 hour.
- Preheat oven to 400.
- Grease 12 muffin c. and fill with batter.
- Bake 20-25 min.
