Yellowtail with Pistachio crust
- 2 Tablespoons Oil
- 1 Tablespoon Juice Of Half Orange
- 2 pieces Yellowtail Kingfish Or Tuna
- 3 Tablespoons Pistachio Roughly Chopped
- 1 Tablespoon Rice Crumbs
- 1 teaspoon Chopped Parsley
- Zest Of Half An Orange
- Salt And Pepper
- Mix the oil and orange juice and drizzle on both side of the fish steaks, salt and pepper to taste.
- Mix pistachio, rice crumbs, parsley and orange zest dip the fish in the crumb mixture pressing lightly to make it adhere evenly.
- Line a tray with baking paper...lightly spray with oil and add the crumbed fish, drizzle remaining oil and juice on top of it.
- Cook in preheated oven for about 15 minutes (depends on the thickness of the pieces of fish) at 180 c
- Hint You can substitute breadcrumbs for the rice crumbs if gluten is not a problem.
- You can substitute lemon juice and zest for the orange.
