BBQ Chicken Shepherd's Pie
- 3/4 cup olive oil
- 24 cups boneless skinless chicken breasts, cut into 1-1/2-inch strips
- 12 cups onions, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 6 cups green peppers, cut into strips
- 24 cups water
- 6 cups Bull's-Eye Bold Original Barbecue Sauce
- 48 cups prepared mashed potatoes Safeway 2 pkg For $5.00 thru 02/09
- 12 cups Kraft Shredded Medium Cheddar Cheese
- Heat oil in 8-L saucepot on medium-high heat.
- Add chicken; cook 5 min., stirring occasionally.
- Add onions and peppers; cook an additional 5 min., stirring frequently.
- Add water and barbecue sauce; mix well.
- Bring to boil.
- Reduce heat to medium-low; simmer 20 min., stirring occasionally.
- Place chicken mixture in 2-inch full hotel pan (or 2-inch half hotel pan for trial recipe).
- Cover with the potatoes; sprinkle with cheese.
- Bake in 350F-standard oven for 15 to 20 min.
