BBQ Chicken Shepherd's Pie

  1. Heat oil in 8-L saucepot on medium-high heat.
  2. Add chicken; cook 5 min., stirring occasionally.
  3. Add onions and peppers; cook an additional 5 min., stirring frequently.
  4. Add water and barbecue sauce; mix well.
  5. Bring to boil.
  6. Reduce heat to medium-low; simmer 20 min., stirring occasionally.
  7. Place chicken mixture in 2-inch full hotel pan (or 2-inch half hotel pan for trial recipe).
  8. Cover with the potatoes; sprinkle with cheese.
  9. Bake in 350F-standard oven for 15 to 20 min.
  10. or until heated through.
