Spinach Glop
- 1 pound spinach rinsed, trimmed and, lightly steamed
- 2-3 tablespoons balsamic vinegar
- 2 Cloves garlic
- 1 x tomatoes fresh
- 1 x basil fresh
- 2 x parsley leaves
- 1 x onions
- Whiz all the ingredients together in a blender or food processer until you have a thick but pourable puree.
- Serve over hot cooked brown basmati rice.
- Makes enough for two hungry people.
