Mari's Rice
- 1 packages chicken bones for broth
- 5 roma tomatoes
- 10 clove garlic
- 1/4 cup vegetable oil
- 1/2 diced onion
- 2 cup jazmine rice
- 3 cup chicken broth
- 1/2 cup fresh cilantro
- 1 diced carrot
- 1 tbsp kosher salt
- 1 tsp freshly ground cumin seeds
- Start by boiling the chicken bones in a medium pot full of water for your broth.
- In another medium pot with water boil the roma tomatoes.
- (You can always use short cuts to any of my recepes).
- While the chicken bones and tomatoes are boiling go ahead and chop the onion, cilantro, carrot, peel the garlic cloves, and ground the cumin seeds.
- Set aside.
- Now that the tomatoes are boiled and cooked add them into your blender with 3 cups of the chicken bone broth, add the garlic cloves.
- Puree for about a minute.
- In a medium pot add the oil and then the onion.
- Let that onion cook (medium high heat) stirring occasionally till the fragrance fills your kitchen...mmmmm.
- Cook for about a minute or two and then add the rice (add more oil if needed) till it's golden brown.
- Now add the tomatoe/chicken broth puree into the pot (it'll jump a bit so suck it up lol) add the salt, cumin, cilantro and carrot.
- Cover and simmer for 25min.
- Add water as needed.
- DO NOT STIR AT ALL AS THE RICE IS SIMMERING >_
- Time's up!
- Taste the rice and add salt for taste and if you're like me you'll add some more fresh cilantro on that baby.
