Mari's Rice

  1. Start by boiling the chicken bones in a medium pot full of water for your broth.
  2. In another medium pot with water boil the roma tomatoes.
  3. (You can always use short cuts to any of my recepes).
  4. While the chicken bones and tomatoes are boiling go ahead and chop the onion, cilantro, carrot, peel the garlic cloves, and ground the cumin seeds.
  5. Set aside.
  6. Now that the tomatoes are boiled and cooked add them into your blender with 3 cups of the chicken bone broth, add the garlic cloves.
  7. Puree for about a minute.
  8. In a medium pot add the oil and then the onion.
  9. Let that onion cook (medium high heat) stirring occasionally till the fragrance fills your kitchen...mmmmm.
  10. Cook for about a minute or two and then add the rice (add more oil if needed) till it's golden brown.
  11. Now add the tomatoe/chicken broth puree into the pot (it'll jump a bit so suck it up lol) add the salt, cumin, cilantro and carrot.
  12. Cover and simmer for 25min.
  13. Add water as needed.
  14. DO NOT STIR AT ALL AS THE RICE IS SIMMERING >_
  15. Time's up!
  16. Taste the rice and add salt for taste and if you're like me you'll add some more fresh cilantro on that baby.
