Rice and Veggie Pilaf
- 1 teaspoon olive oil
- 14 cup orzo pasta
- 1 cup long grain rice
- 2 12 cups chicken broth
- salt and pepper
- 1 small yellow onion, chopped
- 2 stalks celery, chopped
- 14 cup mushroom, chopped
- Heat oil in a pan over medium heat.
- Add orzo and rice and cook until grains look clear.
- Add chicken broth, salt, and pepper.
- Bring to a boil.
- Reduce heat, cover and simmer for 15 minutes.
- Spray a separate pan with a little cooking spray.
- Saute chopped vegetables for about 3 - 5 minutes.
- After the rice has finished cooking, mix sauted vegetables with rice.
- Cover and cook for 5 more minutes.
