Microwave Carrot Cake
- 1 cup wholemeal self raising flour
- 1 teaspoon ground cinnamon
- 1 teaspoon mixed spice
- 3/4 cup brown sugar
- 2 cups grated carrot
- 1/2 cup chopped walnuts
- 1/2 cup oil
- 2 eggs, lightly beaten
- Cream Cheese Frosting
- Lightly blend all ingredients with a wooden spoon or fork.
- grated rind of one lemon
- 2 tablespoons icing sugar, sifted
- 250g tub PHILADELPHIA Spreadable Cream Cheese
- Sift together flour, cinnamon and spice; combine with sugar, carrot and walnuts, mixing well.
- Stir in the oil and eggs, beat until thoroughly combined, approximately 2 minutes.
- Pour into a 20cm ring cake pan.
- Microwave on MEDIUM for 8 minutes or until just cooked.
- Stand for 5 minutes.
- Cool on wire rack.
- Cover with Cream Cheese Frosting.
