Microwave Carrot Cake

  1. Sift together flour, cinnamon and spice; combine with sugar, carrot and walnuts, mixing well.
  2. Stir in the oil and eggs, beat until thoroughly combined, approximately 2 minutes.
  3. Pour into a 20cm ring cake pan.
  4. Microwave on MEDIUM for 8 minutes or until just cooked.
  5. Stand for 5 minutes.
  6. Cool on wire rack.
  7. Cover with Cream Cheese Frosting.
