Andrea's Enchiladas Recipe

  1. Prepare grnd beef, season with a healthy pinch of black pepper, drain.
  2. Prepare white rice.
  3. Preheat oven to 350-400F.
  4. Add in 1/3 can of enchilada sauce to grnd beef, 1/2 a bag of cheese, 1/2 a can of refried beans and rice.
  5. Stir till all ingredients are melted and blended.
  6. Spoon into tortilla shells, roll up and place in a 9 x 13 pan or possibly whatever you would like to use.
  7. You might need to use a second pan.
  8. Pour remaining sauce over the enchiladas.
  9. Sprinkle with the remaining cheese.
  10. Cover and cook till cheese is melted.
  11. Serve with green onions and lowfat sour cream.
