Phad Thai

  1. Throw chilli sauce, tamerind puree, lemon juice and rind, peanut butter and fish sauce into a jar and shake well to combine.
  2. Fry chicken and chilli in wok until lightly browned on high heat.
  3. Add eggs and stir constantly until well scrambled in with chicken.
  4. Lower temp and add sauce, cook for a couple of minutes stirring well.
  5. Throw in noodles, sprouts,mint, spring onions and toasted peanuts- (set aside some onion and mint to garnish)mix well and heat through.
  6. Serve with a slice of lemon- garnish with some mint, spring onion and if you're really brave, some sliced chilli.
  7. Yuuuuum!!
  8. Serves around 4.
