Phad Thai
- 300 grams Chicken thigh, into strips
- 180 grams Rice noodle, cooked
- 3/4 cup Spring onion, sliced diagonally
- 100 grams Bean sprouts
- 1/3 cup Rough chopped peanuts, toasted
- 1/3 cup Sweet chilli sauce
- 1 tbsp Fish suace
- 1 1/2 tbsp Lemon juice
- 1 Zest of 1/2 a lemon
- 1 tbsp Tamarind puree
- 2 tbsp Peanut butter
- 1 tbsp Chopped chilli
- 2 Eggs, whisked
- 1/2 cup Mint, chopped
- 1 Peanut oil for cooking
- 1 Salt and pepper to taste
- Throw chilli sauce, tamerind puree, lemon juice and rind, peanut butter and fish sauce into a jar and shake well to combine.
- Fry chicken and chilli in wok until lightly browned on high heat.
- Add eggs and stir constantly until well scrambled in with chicken.
- Lower temp and add sauce, cook for a couple of minutes stirring well.
- Throw in noodles, sprouts,mint, spring onions and toasted peanuts- (set aside some onion and mint to garnish)mix well and heat through.
- Serve with a slice of lemon- garnish with some mint, spring onion and if you're really brave, some sliced chilli.
- Yuuuuum!!
- Serves around 4.
