Garfinkle Family Noodle Pudding Recipe

  1. Preheat the oven to 350 degrees .
  2. Grease a 13 x 9 inch glass baking dish.
  3. Bring a large covered pot of water to a boil over high heat.
  4. Add the noodles and cook according to package directions.
  5. Drain and return to the cooking pot.
  6. Toss with 2 tablespoons of the melted butter.
  7. Cover and set aside.
  8. In a large bowl, place the sour cream, eggs, cream cheese, sugar, vanilla, salt and the remaining melted butter.
  9. Beat with an electric mixer at low speed until nearly smooth (a few lumps dont matter).
  10. Spread half the noodles in the bottom of the prepared baking dish.
  11. Sprinkle with the apples, raisins, pecans, and 1/2 teaspoon cinnamon.
  12. Cover with the remaining noodles.
  13. Pour the sour cream mixture over all.
  14. Sprinkle with the remaining 1/2 teaspoon cinnamon.
  15. Cover with foil and bake for 30 minutes.
  16. Uncover and bake 30 to 40 minutes more, until puffed and set at the edges and almost set in the center.
  17. Cool on a wire rack a few minutes before serving.
