Smoked Chicken Breast

  1. In a small bowl, combine the brown sugar and salt.
  2. Put the chicken breasts in a large shallow dish and rub them on both sides with the sugar mixture.
  3. Cover and refrigerate overnight.
  4. Smoke the chicken according to the Basic Wok-Smoking Method until golden brown and just cooked through, about 30 minutes.
  5. Let the chicken rest for 5 minutes before slicing.
  6. Serve the chicken warm or cold, with the Spicy Remoulade Sauce or mustard.
