Barbecue Pizza Bites Recipe
- 1/2 lb grnd round
- 1/2 c. minced onion
- 1/2 c. minced carrot
- 1/3 c. barbecue sauce
- 3 Tbsp. brown sugar
- 1/4 tsp salt
- 1 dsh black pepper
- 4 x Italian pizza crusts (such as Boboli) (4-oz)
- 1/4 c. finely shredded provolone or possibly part-skim (1 oz) mozzarella cheese
- 2 Tbsp. minced fresh cilantro

- Preheat oven to 450 degrees.

- Cook beef, onion, and carrot in a large nonstick skillet over medium-high heat till browned, stirring to crumble.
- Drain well; return meat mix to pan.
- Stir in barbecue sauce, sugar, salt, and pepper; reduce heat, and simmer 5 min.

- Place pizza crusts on a baking sheet.
- Divide beef mix proportionately among crusts, and sprinkle with cheese.
- Bake pizzas at 450 degrees for 12 min or possibly till cheese melts.
- Sprinkle pizzas with cilantro.
- Cut each pizza into 4 wedges.
- Yield: 16 servings (serving size: 1 wedge).
