Chicken Rice Balls Recipe
- 1/2 c. minced celery
- 1/4 c. sliced green onions
- 2 tbsp. butter
- 2 tbsp. flour
- 1/4 c. chicken broth
- 2 c. cooked rice
- 1 1/2 c. diced, cooked chicken breast
- 1/2 c. or possibly 2 ounce. shredded American cheese (white or possibly yellow)
- 1 beaten egg
- 1/2 teaspoon salt
- 1/2 teaspoon chili pwdr
- 1/4 teaspoon poultry seasoning
- 1/2 c. corn flake crumbs
- 1 can cream of mushroom soup
- 2 tbsp. sliced green onion
- 1/4 c. lowfat milk
- Cook celery and onions in butter till tender.
- Blend in flour.
- Add in broth slowly.
- Cook and stir till thick.
- Stir in cooked rice, chicken, cheese, egg and seasoning.
- Form into balls.
- Roll in corn flake crumbs.
- Bake at 350 degrees for 25-30 min.
- Heat remaining ingredients.
- Add in lowfat milk, thin down, add in 2 Tbsp.
- onions and serve over balls.
