Chile Verde sauce
- 15 tomatillos
- 2 Anaheim chiles
- 1 jalepeno chiles
- 1/2 pasilla chile
- 1/2 Onion
- 1 clove garlic
- 1 bunch cilantro
- 1 small carrot
- Take off husks of tomatillos.
- Roughly cut onion and carrot.
- Take off stems of chiles
- Boil tomatillos, all chiles, onion, garlic and carrot in stock pot for about 20 minutes
- Using slotted spoon, scoop all boiled ingredients into blender.
- Also, add cilantro to blender.
- Blend on high carefully.
- Steam can cause an exposion in blender.
- I leave mine vented a bit and cover with a towel and slight pressure.
- Salt to taste
- Enjoy with shredded chicken, as a salsa, or use in enchiladas
