Steamed veg Dumplings with spicy tomato chutney

  1. To make the dough : once you've measured the flour mix the flour in a bowl and add cold water, beat with a mixer or use bare hands to mix the dough thoroughly.
  2. Fold the dough over and push down with the heel of your hand, knead thoroughly, repeat this process over and over to get a nice smooth and elastic dough that's when you know your dough is ready.
  3. Takes about 8-10mins.
  4. Cover the dough with a plastic wrap and let it rest while preparing the filling.
  5. Chop all the vegetables into fined peices.
  6. Mix all the ingredients in a bowl.
  7. Add soy sauce and salt mix well.
  8. Take the dough and roll out into round shapes its size is perfect when it fits the palm of your hands.
  9. (do not use excess dusting of flour) the dough should be moist enough for the design to stick together while steaming.
  10. Use a tablespoon to put the filling into the middle (do not put excess filling as the dough will tear ) make any design as you wish :)
  11. Brush the inner part of the steamer with oil.
  12. Make sure the dumplings do not touch each other.
  13. At the bottom of the steamer pour water some ginger and fresh green chilli for a nice aroma.
  14. Optional : You can use pork rib/leg bones or chicken broth if you're making a chicken or pork dumpling.
  15. Steam for 10-15 mins
  16. While the dumpling is being steamed.
  17. Make the tomato chutney.
  18. Cook all the ingredients for 15-20 mins and mash it properly.
  19. Flavour with parsley and salt
  20. Serve hot and enjoy :)
