Strawberry Corn Muffins

  1. Preheat oven to 350F.
  2. Spray 12-cup muffin pan with cooking spray.
  3. Combine cornmeal, flour, sugar, baking powder and salt in mixing bowl.
  4. Whisk together eggs and buttermilk in separate bowl.
  5. Stir cornmeal mixture into egg mixture.
  6. Fold in melted butter and strawberries.
  7. Scoop batter into muffin pan.
  8. Bake 15 to 20 minutes, or until tops are brown.
  9. Cool 10 minutes in pan; cool completely on baking rack.
