Marinated Vegetable Salad
- 1 (16 oz.) bag frozen mixed vegetables, defrosted
- 1 (15 oz.) can garbanzo beans
- 1/3 c. low calorie Italian salad dressing
- 1/4 c. frozen apple juice concentrate
- 1 Tbsp. vegetable oil
- 1 Tbsp. white wine or rice vinegar
- 2 Tbsp. fresh lemon juice
- 2 cloves minced garlic
- 1/8 tsp. freshly ground pepper or to taste
- Combine vegetables and garbanzo beans in a bowl.
- In a jar with tight-fitting lid, shake the salad dressing, apple juice, oil, vinegar, lemon juice, garlic and pepper, to mix well.
- Pour over vegetables and mix well.
- Let marinate several hours in refrigerator.
- Arrange salad on lettuce leaves to serve.
- Drain well and use to stuff a pita.
- Garnish with shredded cheese and lettuce.
