Spicy Mango Salsa
- 4 cups peeled, pitted, finely chopped ripe mangos Whole Foods 2 ea For $4.00 thru 02/09
- 1/2 cup finely chopped onions Safeway 3 lb For $2.99 thru 02/09
- 1/2 cup chopped red pepper
- 2 jalapeno peppers, finely chopped
- 1/4 cup finely chopped coriander
- 2 garlic cloves, finely chopped
- 1/4 cup Heinz Distilled White Vinegar
- 2 limes
- 7 cups sugar
- 2 pouches Certo Liquid Pectin
- Combine prepared mango, onions, peppers, coriander, garlic and vinegar into a large saucepan.
- Grate rind and squeeze juice from limes.
- Add to mango mixture.
- Add sugar and mix well.
- Place saucepan over high heat.
- Bring to a full rolling boil and boil hard 1 minute, stirring constantly.
- Remove from heat.
- Immediately stir in liquid fruit pectin.
- Stir and skim foam for 5 minutes to prevent floating fruit.
- Pour quickly into warm, sterilized jars filling up to 1/4 inch from rim.
- Seal while hot with sterilized 2-piece lids with new centers.
