Spicy Mango Salsa

  1. Combine prepared mango, onions, peppers, coriander, garlic and vinegar into a large saucepan.
  2. Grate rind and squeeze juice from limes.
  3. Add to mango mixture.
  4. Add sugar and mix well.
  5. Place saucepan over high heat.
  6. Bring to a full rolling boil and boil hard 1 minute, stirring constantly.
  7. Remove from heat.
  8. Immediately stir in liquid fruit pectin.
  9. Stir and skim foam for 5 minutes to prevent floating fruit.
  10. Pour quickly into warm, sterilized jars filling up to 1/4 inch from rim.
  11. Seal while hot with sterilized 2-piece lids with new centers.
