Vegan Tzatziki
- 34 cup tofu sour cream
- 1 14 cups soy yogurt
- 1 cup seedless cucumber, grated and drained
- 14 cup fresh dill
- 2 teaspoons garlic, chopped
- 12 lemon, juice of
- 2 tablespoons extra virgin olive oil
- 12 teaspoon black pepper
- 14 teaspoon salt
- Grate the cucumber, and drain using cheese-cloth.
- Combine all the other ingredients in a bowl.
- Cover and let chill for about 1 hour.
