Latin Quarter
- 1/4 ounce absinthe
- Ice
- 2 ounces aged rum
- 1 teaspoon Rich Simple Syrup
- Dash of Angostura bitters
- 3 dashes of Peychauds bitters
- Dash of Bittermens Xocolatl mole bitters (optional)
- 1 lemon twist
- Rinse a chilled rocks glass with the absinthe, then pour it out.
- Fill a pint glass with ice.
- Add all of the remaining ingredients except the twist and stir well.
- Strain into the rocks glass.
- Pinch the twist over the drink, rub it around the rim and discard.
