Sazerac Cocktail

  1. Pour the absinthe in a glass.
  2. Add an ice cube and swirl around.
  3. Dump out the absinthe.
  4. In a cocktail shaker filled with ice, add the cognac, bitters and simple syrup.
  5. Shake and strain into an old-fashioned glass or an antique egg cup.
  6. Garnish with the lemon peel.
